Honey-Citrus Glazed Salmon

3 lbs. salmon filets (skinless, boneless)

whole sides, or cut into 6 oz portions

 

Marinade:

 

1 tablespoon finely chopped orange zest

1 tablespoon finely chopped lemon zest

2 cups orange juice

1 cup lemon juice

½ cup canola oil

1 teaspoon cracked black pepper

 

Glaze:

 

½ cup honey

¼ cup finely chopped Italian parsley

 

Garnish:

 

4 oranges, peeled, seeded and segmented

2 lemons, peeled, seeded and segmented

1 bunch chives, cut into 1 inch batons

 

                                                    Serves 8

1. In a medium, non-reactive bowl, whisk together orange and lemon zest, orange juice, lemon juice, canola oil and pepper. Pour half of the marinade over the fish, cover and refrigerate. Marinate the fish for 45 minutes to 1 hour, turning once.

2. Place remaining marinade into a medium sauce pan and add honey. Bring to a boil, turn heat to medium-low and cook sauce down until it is a thick glaze. Remove from heat, cool to room temperature and add chopped parsley.

3. Line bottom of a broiling pan with foil and place broiling pan grate on top. Move oven racks so that the top of the fish will be at least 5 inches below the broiling element. Put broiling pan into the cold oven to pre-heat  the pan. Pre-heat broiler on high using either regular broil or convection broil.

4. Ten minutes before cooking, remove salmon from refrigerator.

5. Be very careful!  Remove hot broiling pan from the oven and place the salmon, top side up, onto the broiling pan. Season with salt and pepper and brush or drizzle with half of the glaze.

6. Broil fish for 8-12 minutes, depending on the thickness of the salmon. Check by inserting a knife and looking into the thickest part; flesh should be light pink throughout. Remove from the oven when the salmon is just done, remember the salmon keeps on cooking after it comes out of the oven!

7. Remove to a platter, brush with remaining glaze and garnish with orange and lemon segments and fresh chives.
